2 lbs boneless pork shoulder, cut into large chunks
3/4 cup beer
3/4 cup water
1/4 cup apple cider vinegar
2 tbsps brown sugar
Mix brown sugar with the Sicilian Pork Rub then rub the mixture onto the pork pieces. Let the coated pork sit for 30 minutes.
Next, pour bear, water, and apple cider vinegar into the steel pot of the pressure cooker; add in the pork.
Lock pressure cooker, set steam vent to sealing and cook for 50 minutes on high pressure. Let pressure release for 15 minute naturally, before setting the steam vent handle to "venting" to release any remaining pressure.
Transfer pork pieces onto a cutting board and shred with forks.
Skin fat from liquid in the pressure cooker before returning the pork back into the pot.
Give the pulled pork a good stir before serving on fresh sandwich rolls topped with coleslaw!
