Chef's Recipe for Grilled Moroccan Lamb Burgers: Use one seasoning packet for 1.5 lbs of ground lamb. In a large bowl, gently mix lamb, Merguez spice blend, one egg and one tablespoon plain yogurt until thoroughly mixed. Shape the meat mixture into 4 patties about 1/2 inch thick. Lightly brush the burgers with olive oil. Grill or pan-fry the burgers to your desired doneness, 4 to 5 minutes per side for medium-rare. Lamb should be cooked to an internal temperature of 160 degrees. Serve on a toasted burger bun or inside a pita topped with caramelized onions, and a side of roasted potatoes. Enjoy!
