Chef's Recipe for Colorado Beef Fajitas: Trim excess fat from 1-1/2 pounds beef top round steak; cut in half lengthwise, then across the grain into 1/4 inch strips; place in large glass baking dish. Mix 2 cups tomato juice, 1/3 cups lime juice and entire package of Fajita Seasoning. Pour over steak strips. Refrigerate at least 4 (no more than 24) hours, stir occasionally. Arrange on a serving platter: 2 tomatoes, 1 red onion, 1 green bell pepper (all coarsely chopped) and 1 bunch fresh chopped cilantro. Cover and refrigerate until serving. Drain marinade and discard. Stir fry beef until done. Serve steak strips on the platter with warm tortillas, chopped garnish and hot sauce. Chef's Notes: Try this blend on chicken, ground beef or shrimp!
Storage Instructions: In the case that there are remaining spices leftover in your Colorado Spice pouch, please seal in a Ziploc-style bag and store in a dark, cool, dry place. Use within 6 months.
