Chef's Recipe for Herbs de Provence: Yummly.com Recipe for Baked Zucchini de Provence: 3 Zucchini (sliced into 1/4 inch rounds), 6 tbsps olive oil, 2 tsps sea salt, 3 tbsp Colorado Spice Herbs de Provence, 1/4 bread crumbs, 1/4 Parmesan Cheese, salt & pepper.
Preheat Oven to 350 degrees. Arrange a layer of zucchini slices into the bottom of a 9-inch pie pan so they slightly overlap one another, and drizzle with 1 tablespoon of olive oil, season with sea salt and Herbs de Provence. Repeat Layering until Zucchini is all used. Bake in preheated oven for 30 minutes. While zucchini bakes, stir together breadcrumbs, parmesan cheese and 3 tablespoons of olive oil in a bowl, and season with salt and pepper. Spread evenly over baked zucchini and return to oven 10 minutes more. Serve hot.
