Chef's Recipe for Beer Batter: Pour oil into fryer, heat to 375F or medium heat. Mix 1 cup dry beer batter mix with 3/4-1 cup beer or dark carbonated water. Mix gently, and thoroughly. For entire package, use 1 1/2-2 cups beer or soda. Dip seafood or vegetables into batter. Make sure each piece dipped is thoroughly coated. Place battered pieces into hot oil. Cook until golden brown 3-5 minutes, and flip to cook both sides. Use slotted spoon to remove from hot oil. Place on paper towel to drain. Enjoy!
