Delicious Plant-based Sides For Your Thanksgiving Feast

Thanksgiving is almost here! This means it's time to start the planning for all of the glorious food that you will be serving. If you want to switch things up by incorporating some new side dishes into your feast, we have some ideas for you! Below are 8 delicious dishes that are easy to make, wonderfully seasoned, and perfect for all types of eaters at your dinner table, as they don't contain any meat or dairy ingredients!

Roasted Potatoes

Simply halve baby potatoes, and lather with olive oil and Colorado Spice’s Herb and Garlic Pepper Rub. Roast potatoes in the oven for 45 minutes at 400 degree F, for tasty, adorable little spuds!

Arugula, White Bean, and Quinoa Salad

This protein-packed salad is hearty and scrumptious! Toss together cooked quinoa, white beans, arugula, cranberries (pomegranate work great too), and almond slivers. Then make a simple vinaigrette dressing with 3 parts olive oil to 1 part lemon juice. Then mix in one tablespoon or so or our Balsamic Chicken Rub Blend. Don't get hung up on the name! None of our blends contain any animal products. This blend provides a wonderful balance of acid and sweetness to your salad dressing. Add dressing to salad, toss, and serve!  

Smashed Potatoes with Chimichurri Sauce

Boil baby yellow Dutch potatoes in a pot of water. Once potatoes have boiled, smash and flatten potatoes in a large cast iron skillet with oil to fry. While potatoes fry (and don't forget to brown both sides), make our Chimichurri Sauce using our Chimichurri Sauce Blend! Pour contents of Chimichurri Sauce packet into a small bowl. Stir in 1/4 cup water; mix until all ingredients are hydrated. Then stir in 1/3 cup olive oil. Drizzle sauce on top of cooked potatoes, and garnish with fresh scallions.

Roasted Broccolini With Curry Dipping Sauce

Lather broccolini with olive oil, salt & pepper and roast in the oven for 15 minutes at 375 degrees F. As broccolini cook, make a simple dipping sauce with 1/2 cup vegan mayo (like vegenaise), the juice of one lime, and 2 TBSPS of Colorado Spice’s Coconut Curry Sauce. Then drizzle sauce onto broccolini or put into bowl as a dip!

Honey Mustard Glazed Carrots

Lather whole carrots with a mixture of olive oil, honey, and our Sicilian Pork Rub made of mustard seed, garlic, salt, fennel, and coriander. Again, don’t let the name deter you from using this lovely rub, as there are never any animal products in our seasoning blends! Cook for about 30 minutes at 425 degrees F, or until carrots are tender. Simple, sweet and scrumptious!

Turmeric Chickpea Roasted Carrot Salad

Put sliced rainbow carrots and chickpeas onto a baking sheet with olive oil and Colorado Spice’s Gold ‘n Garlic Blend. This spice blend will add a beautiful golden color to the carrots and chickpeas from our high quality turmeric! Cook carrots and chickpeas for 20 minutes at 425 degrees F or until chickpeas have slightly browned and carrot slices are tender. Then let ingredients cool. While ingredients cool, make the dressing with 1/4 cup tahini, the juice of 1 lemon and 2 TBSPS of maple syrup. Put cooled carrots and chickpeas in a bowl, add dressing on top and garnish with parsley!

Sautéed Brussel Sprout Salad

Sautee halved Brussel sprouts in a cast iron skillet with olive oil. When Brussel sprouts start to get crispy, add a few heaping spoonfuls of our Sassy Seasoned Pepper Blend and continue to let Brussel sprouts brown. Once Brussel sprouts look crispy, remove from heat and add in 1/4 cups of pine nuts. Let the pine nuts lightly toast for a few minutes prior to transferring the Brussel sprouts and pine nuts from the pan into a large bowl. Mix in cranberries, freshly chopped parsley and mint, and add in a drizzle of lemon juice and 1tbsp more of olive oil if desired. 

Roasted Green Beans

Top and tail green beans and put onto a baking sheet. Drizzle olive oil and Colorado Spice’s Herb & Garlic Rub onto all green beans. Roast for 10-15 minutes and voila! That’s it for the super simple roasted green bean version! If you want to add more flavor, consider adding the juice of a large orange wedge some orange zest, and chopped cashews onto the green beans prior to roasting! This will increase the flavor, and the texture of the dish. 

Make One, Two or a Few!

There you have it, 8 delicious plant-based side dish options to make for your Thanksgiving meal! The great thing about all of these recipes is that they are simple, require minimal ingredients, and will all have wonderful flavor when you use our seasoning blends!
